INGREDIENTS
2 tsp dijon mustard |
1 tsp olive oil |
1 clove garlic, crushed |
1/2 tsp dried basil |
1/8 tsp each of salt & pepper |
3 small (2 inch) unpeeled red-skinned potatoes, cut into quarters (about 2 1/2 cups) |
COOKING INSTRUCTIONS
- In plastic bag or shallow bowl, combine mustard, oil, garlic, salt and pepper.
- Toss potatoes in mixture, taking care to coat them well.
- Lightly spray baking pan with non-stick coating. Place potatoes on pan.
- Bake uncovered in 425°F oven for 35 minutes, or until potatoes are tender.
NOTES
Per serving: 18 g carbohydrate, 3 g. protein, 3 g total fat ( 0 g sat. fat.) 2 g fibre, 119 mg. sodium, 111 calories.
Simple and quick to prepare, yet quite tasty.
